Japanese Flour Labels: Hakurikiko, Kyōrikiko, and Katakuriko

A recipe asks for flour, but the Japanese shelf offers 薄力粉, 中力粉, 強力粉 and 片栗粉. For cakes and many everyday batters, look for 薄力粉. For yeast bread, 強力粉 is the usual choice; 中力粉 is commonly used for noodles. 片栗粉 is starch used to thicken a sauce or coat food, not a direct substitute for wheat flour in a bread recipe. The package and recipe should decide your final choice.

Choose by what you are cooking

  • Making a cake or a light batter? Start with 薄力粉 if your recipe calls for a low-protein or cake-style wheat flour.
  • Kneading yeast bread or pizza dough? Check for 強力粉. Its higher protein content suits dough that needs more structure.
  • Making udon? 中力粉 is a common choice; follow the flour and water amounts in your specific recipe.
  • Thickening a hot sauce or coating ingredients? Look for 片栗粉. Dissolve ordinary starch in cool water before adding it gradually to a hot sauce while stirring, unless the product explicitly gives different instructions.

Nisshin Seifun Welna explains the protein and typical-use differences among 強力粉, 中力粉 and 薄力粉. The Ministry of Agriculture, Forestry and Fisheries describes how the name 片栗粉 persisted even as potato starch became the common material. Check 原材料名 on the actual bag: a prepared flour mix may contain more than one ingredient.

Do not assume similar-looking bags are interchangeable

小麦粉 contains wheat. A typical plain 片栗粉 made from potato starch is a different ingredient, but the name alone is not a guarantee for someone with a wheat allergy: inspect the ingredients and allergen or shared-facility statements for the exact product. 米粉 also varies by product. A prepared お好み焼き粉, 天ぷら粉 or ホットケーキミックス can include additional seasonings or raising agents. It may change a recipe if used as plain 薄力粉. For storage, the printed 賞味期限 assumes an unopened package kept as directed. After opening, Nisshin advises closing wheat flour well, using an airtight container when appropriate, and using it promptly to prevent moisture, pests and odor transfer. Read your product’s instructions, particularly for prepared mixes.

  • パンを作る強力粉はどこですか。 Pan o tsukuru kyōrikiko wa doko desu ka? — Where is bread flour?
  • これは片栗粉ですか、小麦粉ですか。 Kore wa katakuriko desu ka, komugiko desu ka? — Is this starch or wheat flour?
  • 原材料を確認してもいいですか。 Genzairyō o kakunin shite mo ii desu ka? — May I check the ingredients?
