Japanese Miso Labels: Rice, Barley, Blended and Dashi-In Miso

You want to make miso soup, but the supermarket shelf offers 米みそ, 麦みそ, 合わせみそ and だし入り. Start with the package’s 名称 (product name) and 原材料名 (ingredients). The grain name tells you what kind of kōji was used; だし入り tells you that stock ingredients have already been added. Color and sweetness are separate choices.

Japanese miso labels at a glance

Japanese Reading Meaning at the shelf
米みそ / 米味噌 kome miso Rice-kōji miso made with soybeans. This does not mean rice is the only ingredient.
麦みそ / 麦味噌 mugi miso Barley-kōji miso made with soybeans.
豆みそ / 豆味噌 mame miso Soybean-kōji miso.
調合みそ / 合わせみそ chōgō miso / awase miso A blended style; read the ingredients to see what is combined.
だし入り dashi-iri Stock or flavoring ingredients have been added. Check which ones if that matters to you.
赤みそ / 白みそ aka miso / shiro miso Red / white miso, describing the color or style. Check the label for ingredients and taste.
甘口 / 辛口 amakuchi / karakuchi Sweeter / saltier-tasting style in this context. 辛口 here is not a promise of chili heat.
減塩 / 塩分ひかえめ gen’en / enbun hikaeme Reduced salt; compare the nutrition panel if salt content matters.
保存方法 / 開封後要冷蔵 hozon hōhō / kaifūgo yō-reizō Storage method / refrigerate after opening.

Choose one tub for your kitchen

  1. For a flexible starting point: pick a small tub whose flavor description appeals to you, such as a rice or blended miso. There is no single required type for everyday miso soup.
  2. Want to control the stock yourself? Choose one without だし入り, then add your own dashi or other broth. Our dashi label guide explains the differences between bonito, kombu, iriko and stock packets. If the package says だし入り, read 原材料名 for ingredients such as かつお (bonito), 昆布 (kelp) or other flavorings. Do not assume all dashi is vegetarian.
  3. Comparing sweetness or salt? Read 甘口, 辛口 and 食塩相当量 (しょくえんそうとうりょう, salt equivalent) on the nutrition panel. The amount varies by product; color alone does not give you a reliable salt figure.
  4. Check storage: read 保存方法 and any directions for after opening. Follow your particular tub’s label. Marukome recommends cool storage to maintain miso quality, since its color and flavor can change with time and temperature.

Making a simple bowl

Heat your chosen broth with vegetables or tofu until the ingredients are cooked as needed. Turn the heat down or off, dissolve a little miso in some hot broth, stir it back in, and taste before adding more. How much to use depends on the miso, stock and serving size. If your miso already contains dashi, taste before adding extra stock seasoning. Follow any cooking and storage directions on your product.

At the store, you can ask: だしが入っていない味噌はどれですか。 Dashi ga haitte inai miso wa dore desu ka? — Which miso has no added dashi? Or: この味噌は開封後、冷蔵ですか。 Kono miso wa kaifūgo, reizō desu ka? — Should I refrigerate this miso after opening?

Two easy mix-ups

米みそ is not rice-free of soy. The classification describes the kōji grain; soybeans are still a core ingredient. If you have an allergy, read the actual ingredient and allergen statements every time. Our Japanese food allergen label guide explains where to look.

だし入り is not the same as 合わせみそ. The first tells you stock or flavoring is added; the second describes a blend of miso types or kōji. A product may have both labels.
