Two white cartons sit side by side in a Japanese supermarket. One says 牛乳, another says 乳飲料. Both might look like “milk,” but the small 種類別名称 (shurui-betsu meishō, product category) on the carton tells you more than the name or color on the front. If you want ordinary cow’s milk, find 種類別 牛乳 and check 原材料名 生乳100%. If you want a lower-fat or fortified option, read its category and ingredients instead of guessing from the package design.

The words on Japanese milk cartons
Look for the category in the information panel, often headed 種類別 or 種類別名称. The Japan Dairy Association (J-milk) explains the six common categories and how their ingredients differ.

These are product categories, not a quality ranking. 低脂肪 (“low fat”) on the front does not, by itself, tell you the category: lower-fat products may appear under several categories. Find the smaller 種類別名称 to tell which one you are buying.
Three checks before putting a carton in your basket
- Read 種類別名称. For standard unadjusted cow’s milk, choose 牛乳. If you want a lower-fat product, compare 低脂肪牛乳 with products categorized as 加工乳 or 乳飲料 rather than treating every carton marked 低脂肪 as the same thing.
- Read 原材料名 (ingredients) and 乳脂肪分 (milk-fat content). A carton categorized as 牛乳 uses 生乳 (raw milk) as its ingredient. 加工乳 can include other dairy ingredients; 乳飲料 can include ingredients outside dairy. An added-calcium white drink can therefore be 乳飲料 even if it looks like ordinary milk. For allergies or ingredients you avoid, check the full label on the actual product. - Read 保存方法 and the date. 保存方法 means storage instructions. Check whether the carton requires refrigeration and follow its stated temperature. 賞味期限 is a best-before date under the stated conditions for an unopened product; 消費期限 is a use-by date. Opening the carton changes the situation, so follow its 開封後の取扱 (after-opening instructions) rather than relying on the printed date alone. At the store, you can ask 「成分無調整の牛乳はどれですか?」 (Seibun muchōsei no gyūnyū wa dore desu ka?, “Which one is unadjusted milk?”) or 「低脂肪牛乳はありますか?」 (Teishibō gyūnyū wa arimasu ka?, “Do you have low-fat milk?”).
What about soy and oat drinks?
豆乳 (tōnyū, soy milk) and オーツミルク (ōtsu miruku, oat drink) are separate plant-based products. A word like “milk” in a product name does not make a plant-based drink 牛乳 or 乳飲料 under the dairy categories. The Consumer Affairs Agency’s plant-based food guidance makes that distinction. Read the ingredient list if you need to avoid dairy or soy; do not judge by the color of the carton.
Once you know where 種類別名称 sits, a crowded dairy shelf becomes easier to navigate: category first, ingredients and fat content second, then storage and date.
